TURNING LEMONS INTO LEMONADE

The last two months have been very strange and interesting. I have been under quarantine for a lot of the time. I have begun to practice a lot of my hobbies more and more. It has been pretty fun for me, although leaving the house was sometimes stressful or difficult.

この2ヶ月はとても不思議で面白いものでした。

緊急事態宣言中、私はより自分の趣味を実践し始めました。

家を出ることはときどきストレスとなりましたが、とても楽しかったです。

About 70 percent of my time at home, I have enjoyed watching South Korean films and TV series. I have watched many of Director Park Joon-Ho’s films. I have also watched many of Actor Lee Byun-Hun’s TV series and films. “Memories of Murder” and “Mister Sunshine” were very good and I recommend them a lot.

家にいるときの約70％は韓国映画やテレビシリーズを見て楽しみました。

ポン・ジュノ監督の映画をたくさん見ました。

また、イ・ビョンホンの出ているテレビシリーズや映画も多く見ました。

『殺人の追憶』と『ミスター・サンシャイン』は私のお勧めです。

My hobbies of making coffee and baking have improved a lot. Now, I am making many kinds of bread and I am roasting my own coffee. I buy green coffee and roast it at home. It is nice to smell fresh roasted coffee in my home. I also make a lot of canele, of course.

趣味のコーヒー作りとパン作りも上達してきています。

今はたくさんの種類のパンを作ったり、自分のコーヒーを炒ったりしています。

グリーンコーヒーを買って家で炒っています。

家で新鮮なコーヒーの香りをかぐのは良いです。

もちろん、カヌレもたくさん作っています。

Sometimes I left the house to go on long walks alone. I walked to “Big” Supermarket in Shinannyo. It was too far and my foot was a little damaged the next day. Usually, I just walked to Youme Town in Kudamatsu.

とても遠かったので、次の日足が少し痛かったです。

ふつう私は下松にあるゆめタウンまで歩いて行ってました。

Overall, it has been pretty fun to have a lot of time to concentrate on small activities. I have learned to appreciate and respect doing small tasks. Cleaning my home or cooking my dinner is more fun now. Finding happiness in small things is so important during these times of COVID-19.

全体的に、小さなことに集中する時間がたくさんあってとても楽しかったです。

ささいな仕事に対しての感謝や敬意を払うようになりました。

今では家の掃除や夕食作りもより楽しく思えます。

コロナ禍の間に、小さなことから幸せを見つけることはとても大事です。

UPDATES ON LIFE, VACATION & FOOD

This New Year's vacation I was going to go to South Korea. I posted about this on my previous Obon Holiday update. Unfortunately, this did not happen because the weather and the pollution in Seoul was very bad this year. 

今年の年末年始は韓国に行く予定でした。去年のお盆の時期に「今年の冬は韓国に行く」と投稿していましたが、ソウルの天候と汚染が今年は
ひどかったので、実現しませんでした。

Instead I stayed in Japan and traveled all over the country. It was very fun and exciting. A friend from America joined me and we had a lot of good times.

その代わりに日本に残って、様々な場所に旅行をしました。アメリカ出身の友達も一緒だったので、楽しい時を過ごすことができました。

I visited Fukuoka City a few times for special food. The first time I went for Mizutaki! It was the first time I tried it. It was okay, my friend and I thought it was too expensive.

福岡へ何回か食事に訪れました。今回初めて「水炊き」を食べに行きました！おいしかったですが、値段が高いかなと感じました。

We also visited a Korean-style shaved ice shop. This place is the same shop I used to visit in Seoul. This is their third shop franchise in Japan! I love this place. The shaved ice is made with milk, instead of water. The toppings are creative and so good!

韓国風のかき氷屋さんにも行ってきました。ここは私がソウルに訪れたものと同じお店で、日本で3件目のフランチャイズ店です。

ここのかき氷は水の代わりに牛乳でできた氷を使っていて、トッピングも独創的で素晴らしいです！

The second trip to Fukuoka, I found a special caneles shop! It was great. They had many flavors and they all tasted great. The picture is of rum, blueberry and honey-fig.

2度目の福岡では、カヌレ店を見つけました！たくさんの味があり、とてもおいしかったです。

Back in Shunan I was able to try and cook some great food. I tried the special ramen at Kaoru Torisoba. It had many toppings such as spinach, boiled egg, chashu, wontons and bamboo shoots.

周南では「鶏そば　カヲル」というところでラーメンを食べに行きました。ほうれん草やゆで卵、チャーシュー、ワンタン、メンマといった

トッピングでした。

I also tried a new coffee shop in Shunan, called "Ueda". It was very small, but the service was great. The coffee was served in beautiful Hagi-ware cups. 

また、「うえだ」という周南に新しくできた喫茶店にも行きました。小さなお店ですが、サービスが素晴らしかったです。

コーヒーは美しい萩焼のコップに入っていました。

There was a Goto-style udon shop that I tried. The noodles were special "thin" type that I really enjoyed. The soup was warm and tasted like anchovies.

「五島うどん」のお店にも行ってきました。特別な細麺を使っていて、とても楽しめました。スープは温かく、
アンチョビのような風味がしました。

Visiting Hiroshima, I found a stylish "boba" shop! In Japan, people call this drink "tapioca", but in America it is called "boba". I don't really know why this is name was chosen. This type was special because they use a brown sugar syrup. It looks great and tastes very good!

I visited many other places, but I did not take pictures. Sorry. Next time I will remember to take photos for the blog.

広島に訪れたときは、今はやりの「ボバ」店に行ってきました。日本では「タピオカ」と呼ばれていますが、

アメリカでは「ボバ」と呼ばれています（なぜそういう名前になったのかは分かりません）。

これはブラウンシュガーのシロップを使ったもので、見た目も味も良かったです！他にも色んな場所に行ってきたのですが、

写真を撮ってきてないのでごめんなさい。次回は忘れないようにしますね。

Lastly, back to regular life. I have continued to bake bread and caneles. The bread is now very, very good. Probably the best I can make. The caneles are perfect every time and I am trying to make them more stylish and tasty.

最後に、日常生活について。私はパンやカヌレを今も作り続けています。今やパンもとてもおいしく作ることができ、
今までで一番上手にできていると思います。カヌレ作りも常に完璧で、よりスタイリッシュでおいしくなるように挑戦しています。

Last weekend, January 26, I walked in the park and saw the plum blossoms had started to bloom. Ah, It is too early! This was a warm winter.

SOME RAMEN I HAVE EATEN

Hello again, it has been some time since I wrote about ramen on the blog. Today, I will tell about three recent ramen I have eaten!

こんにちは！このブログで何回かラーメンについての記事を書いてますが、
今回は私が最近食べたラーメンを3つ紹介します！

Riba's Gyukotsu Ramen!
「リバー」の牛骨ラーメン！

I am sure most people in Shunan already know about Kudamatsu-style ramen. You know, "gyukotsu" or beef bone ramen. But did you know the best beef bone ramen is not in Kudamatsu?! Nope! The best gyukotsu is in the city of Hofu. It is at the Showa-style coffee shop called, "Riba" or River. The gyukotsu ramen at this shop is amazing. It is not too sweet or too salty like the other places in Kudamatsu. This ramen is perfect. The shop is also very cool. The style is very much like a Showa-era "kissaten" or coffee shop. 

　ほとんどの周南の方はすでに下松スタイルのラーメンについて知っていると思います。
牛の骨を使った「牛骨ラーメン」です。ですが、一番おいしい牛骨ラーメンを出すお店は
下松市ではないのです。「リバー」という防府にあるお店です。

　そこの牛骨ラーメンは下松の店で出されるものより甘すぎず、塩辛くありません。
完璧な美味しさです。お店自体もクールで、昭和の喫茶店のような雰囲気です。

Next is the niboshi or "anchovy" ramen from the shop called Waragoya in Shunan. The shop is pretty new and is on Nibancho street. The ramen here is pretty good. Not the best, but good for a once-in-a-while treat. If you like noodles, the noodles here are pretty good and they have many sizes. You can get a very large here for a good price. The ramen types that are available are beef-chicken, pork bone, and anchovy. The taste of the anchovy ramen is very nice. It is not too fishy and has a nice light taste.

次は周南の「わらごや」という店のにぼしラーメンです。この店は二番町にある新しいお店で、
ラーメンもおいしいです。ときどき食べてみたくなります。ここの麺はとても良く、サイズがたくさんあるので、麺が好きな人にお勧めです。

大盛りを安い値段で食べられます。牛鶏ラーメン、豚骨ラーメン、にぼしラーメンが食べられます。
特ににぼしラーメンが一番です。魚っぽくなくて、あっさりした味です。

The last ramen I want to write about is another place in Hofu. It is called Oshima Ramen! The ramen here is all seafood or "gyokai" base. The two options they have for soup are anchovy or clam, "asari". The anchovy ramen is my favorite. Unlike the anchovy ramen from Waragoya, the soup here is stronger. The thickness of the soup is better and the anchovy flavor is stronger. The soup is not fishy. It just has a nice seafood taste. The noodles here are also unique. They are very yellow and are curly. They are not straight noodles, like many other shops. I really enjoy this ramen a lot.

最後は防府にある「大島」というラーメン屋です。ここのラーメンは魚介ベースで、にぼしかアサリの2種類のスープが選べます。私はにぼしラーメンがお気に入りです。わらごやのラーメンとは違って、ここのスープは濃い味で、にぼしの味も強いです。スープも魚臭くなく、おいしい魚介類の味です。

ここの麺は独特で、黄色いちぢれ麺です。他の店のようなまっすぐな麺ではないのです。
私はこのラーメンが本当に大好きなのです。

“THE DOG DAYS OF SUMMER” A.K.A. SUMMER VACATION

I have lived in Japan for over two years now. Last year, I went to Switzerland for summer vacation. It was so nice! The weather was perfect, and scenery was fantastic. I spent time with my mother and father and some of my extended family.

私は日本に2年以上住んでいます。去年の夏休みはスイスに行きましたが、とても良かったです！天気も最高で、景色も素晴らしかったです。
両親、親戚といっしょに過ごしました。

I really dislike the summers here in East Asia. I have lived in China, South Korea and Singapore and all those countries have terrible summers. Singapore only has summer!

東アジアで過ごす夏は本当に好きではありません。中国や韓国、シンガポールにいた時の夏はとても暑かったです。
シンガポールは1年中夏のようです！

I did take one day to go to Fukuoka city. The weather was amazing! There were only clouds in the sky, and it was a little windy. I visited my favorite coffee shops and three bakeries. I ate a large, black curry as well.

一日だけ福岡に行く機会がありました。天気は曇りで少し風が吹いていました。福岡ではお気に入りの喫茶店とパン屋に行きました。

大盛りの黒カレーも食べました。

So, this year, when I was deciding what to do for my summer vacation, I chose to stay home and save money for a big winter vacation in a few months’ time.
今年ですが、夏休みに何をするか決めているときに、冬休みに備えて家にとどまり、お金を節約していくことを選びました。

I decided to go to South Korea! I will go for my entire winter holiday. The whole time will be spent in Seoul. I used to live in Seoul in 2015 so I know the city very well. I will enjoy the cold Korean winter. I will also spend time with my Korean friends in Seoul.

冬休みは韓国に行くことに決めました！冬休みの間はずっとソウルで過ごす予定です。2015年にソウルに住んでいたので、
町のことはよく知っています。
今年の冬は韓国の寒い冬を楽しんで、ソウルにいる韓国人の友人といっしょに過ごすでしょう。

What I am looking forward to the most is the food. Both the traditional Korean food and the new, modern food of Seoul. I will be able to eat all my favorite food. I will also rent a hotel room all to myself. It will be a good time for me.
一番楽しみにしているのは食べ物（韓国の伝統料理と現代的な料理）です。お気に入りの食べ物は一通り食べられると思います。
ホテルも自分でとるでしょう。私にとっていい時間になるでしょう。

MY BAKING ADVENTURE

In my last blog post I wrote about starting to bake caneles. Since then, I have become very good at making caneles. I can bake matcha, chocolate, earl grey, cinnamon, and many other flavors. But before I started baking caneles, I was baking bread at home.

以前、私のブログでカヌレ作りを始めたと書きましたが、それ以来作るのがうまくなってきています。

抹茶やチョコレート、アールグレイ、シナモンなど、いろんな味を焼くことができます。でもカヌレを作る前は、

家でパンを焼いていました。

Early bread was good, but the shapes were bad.
作り始めたころは味は良かったのですが、形が良くありませんでした。

I am a BIG fan of hard, tough bread. The kind of bread that you can find easily in European countries. The kind of bread that feels like you have to fight it in order to eat it.

私は固くて丈夫なパンが大好きです。そういったパンはヨーロッパの国で簡単に見つけられます。
皆さんはそれを食べるのに一苦労するでしょうね。

This bread good, but the color was too light.
こちらのパンは、色が薄すぎます。

This kind of bread is very difficult to find in Japan, so I decided I would teach myself how to make it at home. I started using whole wheat flour, and then mixed in wheat bran, wheat germ and graham flour. This gave the bread a lot of flavor and toughness.

これらのパンは日本で見つけるのがとても難しいので、自分で作り方を研究しようと決めました。

小麦粉をいっぱい使い、麦のぬか、麦の芽、グラハム粉といっしょに混ぜました。こうすることでパンの風味がよくなり、

より丈夫になります。

Later, I started to add sesame seeds, mixed nuts (almonds, cashews and walnuts), and raisins. This made the flavor much better and made the texture tougher. I also adjusted the amount of water in the dough to make the bread tougher and drier. 

その後、ゴマやミックスナッツ（アーモンド、カシューナッツ、クルミなど）、レーズンを加えました。
こうすることで味がさらに良くなり、歯ごたえが増します。そしてパンをより硬く、乾燥させるためにパン生地に入れる
水の量を調節しました。

These ones had good color and nice shape.
これらのパンは色も形もバッチリです。

Lastly, I started to ferment the dough for long periods of time in the refrigerator (sometimes five days).  This made the bread taste sour and a little sweeter. 

最後に、冷蔵庫で長時間（時には5日ほど）小麦粉を発酵させました。こうすることでパンに酸味が加わり、

少し甘くなります。

Now, I can make bread that is just as delicious in my home than a bakery.

今や私は、パン屋よりも美味しいパンを家で作ることができます。

MAKING CANELES IN JAPAN

Recently, I started to try to make caneles in my apartment. Do you know caneles? They are a French custard cake from the area of Bourdeax, also famous for wine making.

最近、「カヌレ」というお菓子を作り始めました。皆さんは「カヌレ」をご存知ですか？カヌレはワイン作りでも

有名なフランスのボルドー地方のカスタードケーキです。

Caneles are very delicious and when I researched their ingredients, they sounded easy to make. I bought a silicon mold, and began to try to make caneles.

カヌレはとても美味しくて、材料を調べた時に簡単に作れそうだと思いました。私はシリコン製の型を買って、

カヌレ作りに挑戦してみました。

You can see the first few times were very bad. The shape was wrong and the color was bad too. The taste was good. I was very sad and angry. 

見ての通りですが、最初の数回は上手にできませんでした。味は良かったのですが、形が変で色も良くありません。

During Golden Week, I tried many more times to make caneles, but every time I tried to make them, I failed. Badly.

ゴールデンウィークの間に、何度もカヌレ作りに挑戦してみたのですが、毎回失敗してしまいました。

At the end of Golden Week, I wrote an e-mail to a bakery shop in Paris, France. I asked to buy their caneles molds. They said yes and I bought eight of them! They were very expensive but worth the price. I also bought beeswax, which was difficult to find in Japan.

ゴールデンウィーク終盤、私はフランスのパリにあるパン屋さんにカヌレの型を買いたいというメールを書きました。良いという返事を頂き、

8つも購入しました！値段は高かったのですが、それだけの価値はありました。私は日本では入手困難なミツロウも購入しました。

I took a weekend and went to Fukuoka for caneles' research. I found caneles at three stores in the Tenjin neighborhood, Paul, DonQ, and Maison Kayser. They are located in the basements of large department stores. Each of them was good, but only Paul was the best. It had a good orange and rum flavor, the other did not.

週末にはカヌレのことについて、福岡まで調べに行きました。天神の近くにある「ポール」、「ドンク」、

「メゾンカイザー」の3店舗でカヌレを見つけました。この3つは大型デパートの地下にあります。

どれもおいしかったのですが、オレンジとラム酒の味がしたポールのカヌレが一番でした。

After a few times, I can make better canele than the professional shops! Amazing. The hardest part is cooking the caneles. You need high heat for a long time.

その後は専門店よりも美味しいカヌレを作ることができます！びっくりです。一番苦労したのは

カヌレを加熱するところでした。高温で長時間熱する必要があります。

PRACTICE MAKES PERFECT

It is said that "practice makes perfect". I think it is true. How about you? One of the most difficult things about learning a new language is finding ways to practice.

「習うより慣れよ」という言葉。本当にその通りだと思います。言語習得で一番難しいことは、練習方法を見つけることです。

In high school and junior high school, you could practice five days a week! How lucky you were! When I was in high school I used to practice speaking Spanish in class with a real Spanish teacher from Spain. 

中学・高校では週に5回は練習できたと思います。高校時代の私も、スペイン語の練習でネイティブのスペイン人の先生の授業を

受けていました。

So now that you are an adult, where and how do you find the time and place to practice your language? It is difficult, right?! In this post I will share my top 3 tips for practicing English every day. 

そして大人になった今、あなたはどこで、どのように言語習得をする時間と場所を見つけますか？難しいですよね？！今回は、毎日英語を練習するための3つの秘訣をお教えします。

Tip #1: Choose your style　（スタイルの選択）

You have to decide which type of practice you want to do. Maybe you want to practice listening. Maybe you want to practice speaking or writing or reading. The first thing you must do is decide which skill you want to increase.

どのタイプの練習をあなたがしたいのか決める必要があります。リスニングという方もいれば、スピーキング、ライティング、

リーディングという方もいるでしょう。最初にすべきはどのスキルを伸ばしたいか決めることです。

Tip #2: Understand your limits　（限界を知る）

The next tip is more difficult to understand because you have know what you can and cannot do. Maybe you are a busy office worker or maybe a struggling student. Maybe you have plenty of time on your hands. You have to evaluate your time and find places where you can practice and study. If it is important to you, you will find the time to do it.

2つめは理解するのがより難しいでしょう。なぜならあなたができること、できないことを知る必要があるからです。

忙しい会社員という方もいれば、苦労している学生だという方、時間をもてあましている方もいるでしょう。

自分の時間を評価し、勉強する場所を見つける必要があります。

Tip #3: Practice makes perfect（習うより慣れよ）

I will divide this part into two sections.

ここでは2つのパートに分けて話します。

Listening/Reading: （リスニングとリーディング）
These two areas are easier to do alone and can be done at home. I would strongly suggest listening to NHK radio's programs on English learning. They are free and give you a great opportunity to listen to Native and Japanese language speakers. Movies are another great way to get practice. Use English subtitles if you are very confident, or you can use listen to English and use Japanese subtitles. Either way you get to build your listening skills and vocabulary by reading the subtitles.

この2つは一人でも学習しやすく、家でもできます。ＮＨＫの英語学習ラジオ番組がオススメです。無料なうえに、
外国人と日本人の会話を聞く良い機会になります。
映画もオススメです。自信があれば英語の字幕で見てみたり、日本語の字幕で英語の音声を聞いたりしてみましょう。
どちらもリスニング力と語彙力の向上につながります。

Speaking/Writing: （スピーキングとライティング）
Continuing from watching movies, you should keep a notebook handy and write down any new words you hear. Also, writing short reviews of movies or concerts is a great way to practice writing. Write what things you liked and didn't like to get you started. For speaking practice, you should try listening to the NHK radio shows and repeating what they say. Listen for ten seconds and repeat. This is a little troublesome, but it is really good practice. Pronunciation is not a focus here. Only getting you to practice speaking. It will also boost your memory!

映画を見ながら、新しく聞こえた単語をノートに書き出していくのも良いです。また、映画やコンサートの感想を短く書くこともライティングの練習になります。好きだったところ、好きでなかったところを書いていきましょう。
スピーキングの練習では、ＮＨＫのラジオ番組を聴いて、出演者が言ったことをリピートしてみましょう。10秒間聞いてリピートです。ちょっと面倒ですが、本当に良い練習になります。発音はここでは重視していません。この練習であなたの記憶力も高まっていくことでしょう！

Those are my top 3 tips for practicing language outside of the classroom. You can always ask me in class for more advice if you want it. Be bold!

A VISIT TO MEXICO

皆さんはメキシコと聞いて何をイメージしますか？一番最初に「タコス」を思い浮かべる人がほとんどでしょう。

確かにタコスはメキシコで有名ですが、メキシコでできることはまだまだたくさんあります！

What do you think about when you hear the country, Mexico? I bet you think of “tacos” first! It is true that tacos are a large part of Mexican food, but there is a lot more to do in Mexico than eating tacos!

最近、カリフォルニアから移住した家族に会いにメキシコを訪れました。両親は退職後に新しい場所で新しい生活を始めたがっていましたが、

メキシコは文句なしの場所でした。

Recently, I went to Mexico to visit my family. They recently moved there from California. Both my parents are retired and wanted to start a new life in a new place. Mexico was perfect.

メキシコはとても大きい国です。地図上ではアメリカやカナダと比べると大きくはないですが、かなり広いです。

カリフォルニアのサンディエゴからサン・フェリペまで車で6時間もかかりました！

First of all, the country is very big. I know it does not look big on the map, compared to The United States and Canada, but it is very large. We drove from San Diego, California, to San Felipe, Mexico, and it took six hours! We were not even halfway down Baja California!

両親はメキシコのバハ・カリフォルニア州に住んでいて、アメリカのカリフォルニア州によく似ています。自然がとても素晴らしくて、

砂漠や海があります！山々は素敵で、サボテンも大きいです。海側も美しくて、水は澄んだ青色です。

釣りをするとイカやマグロなど多くの魚が簡単に釣れます。

My parents live in Baja California, which is a state in Mexico, just like California is a state in America. The nature of Baja California is amazing! The environment is desert and ocean. The mountains look so cool and the cactus are very large. The ocean side areas are beautiful. The water is clear and blue. There is amazing fishing in the ocean as well. Squid, tuna and many other fish can be caught easily.

食べ物もおいしいです。サン・フェリペにあるレストランに何軒か行ってきました。「カマロネス」というエビ料理が甘くてとても柔らかいです。メキシコ風ビーフタコスやチュロスも食べました。

The food was also very good. We tried a few restaurants in San Felipe that were delicious and fresh. The special food from San Felipe is called “camarones”, they are shrimp! They taste sweet and very tender. We also ate Mexican-style beef tacos and churros.

The best part about visiting Mexico was visiting my parents. It had been two years since I saw them. I was very happy to see my cat and dog also. They were very cute and friendly to me. Overall, it was a great trip and I will always remember Mexico as a nice place to visit.
