SOME RAMEN I HAVE EATEN

Hello again, it has been some time since I wrote about ramen on the blog. Today, I will tell about three recent ramen I have eaten!

こんにちは！このブログで何回かラーメンについての記事を書いてますが、
今回は私が最近食べたラーメンを3つ紹介します！

Riba's Gyukotsu Ramen!
「リバー」の牛骨ラーメン！

I am sure most people in Shunan already know about Kudamatsu-style ramen. You know, "gyukotsu" or beef bone ramen. But did you know the best beef bone ramen is not in Kudamatsu?! Nope! The best gyukotsu is in the city of Hofu. It is at the Showa-style coffee shop called, "Riba" or River. The gyukotsu ramen at this shop is amazing. It is not too sweet or too salty like the other places in Kudamatsu. This ramen is perfect. The shop is also very cool. The style is very much like a Showa-era "kissaten" or coffee shop. 

　ほとんどの周南の方はすでに下松スタイルのラーメンについて知っていると思います。
牛の骨を使った「牛骨ラーメン」です。ですが、一番おいしい牛骨ラーメンを出すお店は
下松市ではないのです。「リバー」という防府にあるお店です。

　そこの牛骨ラーメンは下松の店で出されるものより甘すぎず、塩辛くありません。
完璧な美味しさです。お店自体もクールで、昭和の喫茶店のような雰囲気です。

「わらごや」の、にぼしラーメン！

Next is the niboshi or "anchovy" ramen from the shop called Waragoya in Shunan. The shop is pretty new and is on Nibancho street. The ramen here is pretty good. Not the best, but good for a once-in-a-while treat. If you like noodles, the noodles here are pretty good and they have many sizes. You can get a very large here for a good price. The ramen types that are available are beef-chicken, pork bone, and anchovy. The taste of the anchovy ramen is very nice. It is not too fishy and has a nice light taste.

次は周南の「わらごや」という店のにぼしラーメンです。この店は二番町にある新しいお店で、
ラーメンもおいしいです。ときどき食べてみたくなります。ここの麺はとても良く、サイズがたくさんあるので、麺が好きな人にお勧めです。

大盛りを安い値段で食べられます。牛鶏ラーメン、豚骨ラーメン、にぼしラーメンが食べられます。
特ににぼしラーメンが一番です。魚っぽくなくて、あっさりした味です。

The last ramen I want to write about is another place in Hofu. It is called Oshima Ramen! The ramen here is all seafood or "gyokai" base. The two options they have for soup are anchovy or clam, "asari". The anchovy ramen is my favorite. Unlike the anchovy ramen from Waragoya, the soup here is stronger. The thickness of the soup is better and the anchovy flavor is stronger. The soup is not fishy. It just has a nice seafood taste. The noodles here are also unique. They are very yellow and are curly. They are not straight noodles, like many other shops. I really enjoy this ramen a lot.

最後は防府にある「大島」というラーメン屋です。ここのラーメンは魚介ベースで、にぼしかアサリの2種類のスープが選べます。私はにぼしラーメンがお気に入りです。わらごやのラーメンとは違って、ここのスープは濃い味で、にぼしの味も強いです。スープも魚臭くなく、おいしい魚介類の味です。

ここの麺は独特で、黄色いちぢれ麺です。他の店のようなまっすぐな麺ではないのです。
私はこのラーメンが本当に大好きなのです。

Peering at Pears

…for a day of picking pears with friends.

友達と梨狩りに行ってきました！

It was a refreshing, sweet and relaxing experience. It was my first visit to a farm of that type. Upon seeing the bounty of friuts all wrapped in paper bags, surprised me… .

梨狩りをして私たちはさわやかな気分になれました。今回のような梨園には初めて訪れました。紙で包まれた果実の恵みを見ると同時に、私たちは驚きました。

I knew it must have been very time consuming to have bag all the friuts!!!  There were bags every where!  My next challenge was being able to select the best friuts for my carry-home bag ( a plastic bag give to you by the host upon entering, the farm).

全部の果実の袋を持つのに時間がとてもかかるに違いないと思いました。家に持ち帰る袋の中に一番いい果実を選んで入れました。

I left the farm filled with satisfaction of my experience.

The Obon Holiday I Will Never Forget

The Yanai Gold Fish Festival was particularly entertaining. All age groups participated and it was loud and fun to watch. Some of the participants fell while running around in circles! Everybody laughed, but they did not seem to hurt themselves.

今年のお盆は柳井金魚ちょうちん祭りに行ってきました。子供から大人まで参加していて、にぎわっていました。金魚のねぶたが街中を動き回っているときに、ねぶたから落ちた人もいました。それでもみなさん笑っていて、痛そうにはしていませんでした。

 Akiyoshido Cave I was pleased to see the increase in the growth of the plants I featured in my first blog. They reminded me of  bananas I have at my home in Jamaica. We eat green bananas fried or boiled, it is one of the staples of my country.

秋芳洞にも訪れました。私の最初のブログでそこにあった植物について書きましたが、そこの植物が成長していたのを見て嬉しかったです。

その植物を見てジャマイカの家にあるバナナのことを思い出しました。バナナはジャマイカの特産物の一つで、緑色のバナナを揚げたり

茹でたりして食べています。

Bananas is a perennial plant. It is sometimes planted with other crops in the yards of interested Jamaicans or on large farms as a monoculture crop. The plants are easily damaged by hurricanes, diseases or droughts.

バナナは多年生の植物で、他の作物と一緒に植えられたり、大きな農場ではバナナだけを栽培していることもあります。

ですが、ハリケーンや病気、干ばつなどで簡単に傷んでしまいます。

This is the largest collection of this reptile I have ever seen. These are turtles. They all seemed interested in getting closer, maybe they thought I had food!

これは亀の写真ですが、私が今まで見た中で一番多く集まっていました。私がエサを持っていると思ったのか、みんな近くに集まってきました！

I am still awed by the mountainous topography of Japan and I am also impressed with the engineering used to strengthen the vulnerable slopes.

私は今もなお日本の山の地形に畏敬の念を抱いています。そして私は日本の土木の技術が崩れやすい山の斜面をより強くしたことに対して感動しています。

“THE DOG DAYS OF SUMMER” A.K.A. SUMMER VACATION

I have lived in Japan for over two years now. Last year, I went to Switzerland for summer vacation. It was so nice! The weather was perfect, and scenery was fantastic. I spent time with my mother and father and some of my extended family.

私は日本に2年以上住んでいます。去年の夏休みはスイスに行きましたが、とても良かったです！天気も最高で、景色も素晴らしかったです。
両親、親戚といっしょに過ごしました。

I really dislike the summers here in East Asia. I have lived in China, South Korea and Singapore and all those countries have terrible summers. Singapore only has summer!

東アジアで過ごす夏は本当に好きではありません。中国や韓国、シンガポールにいた時の夏はとても暑かったです。
シンガポールは1年中夏のようです！

I did take one day to go to Fukuoka city. The weather was amazing! There were only clouds in the sky, and it was a little windy. I visited my favorite coffee shops and three bakeries. I ate a large, black curry as well.

一日だけ福岡に行く機会がありました。天気は曇りで少し風が吹いていました。福岡ではお気に入りの喫茶店とパン屋に行きました。

So, this year, when I was deciding what to do for my summer vacation, I chose to stay home and save money for a big winter vacation in a few months’ time.
今年ですが、夏休みに何をするか決めているときに、冬休みに備えて家にとどまり、お金を節約していくことを選びました。

I decided to go to South Korea! I will go for my entire winter holiday. The whole time will be spent in Seoul. I used to live in Seoul in 2015 so I know the city very well. I will enjoy the cold Korean winter. I will also spend time with my Korean friends in Seoul.

冬休みは韓国に行くことに決めました！冬休みの間はずっとソウルで過ごす予定です。2015年にソウルに住んでいたので、
町のことはよく知っています。
今年の冬は韓国の寒い冬を楽しんで、ソウルにいる韓国人の友人といっしょに過ごすでしょう。

What I am looking forward to the most is the food. Both the traditional Korean food and the new, modern food of Seoul. I will be able to eat all my favorite food. I will also rent a hotel room all to myself. It will be a good time for me.
一番楽しみにしているのは食べ物（韓国の伝統料理と現代的な料理）です。お気に入りの食べ物は一通り食べられると思います。
ホテルも自分でとるでしょう。私にとっていい時間になるでしょう。

MY BAKING ADVENTURE

In my last blog post I wrote about starting to bake caneles. Since then, I have become very good at making caneles. I can bake matcha, chocolate, earl grey, cinnamon, and many other flavors. But before I started baking caneles, I was baking bread at home.

以前、私のブログでカヌレ作りを始めたと書きましたが、それ以来作るのがうまくなってきています。

抹茶やチョコレート、アールグレイ、シナモンなど、いろんな味を焼くことができます。でもカヌレを作る前は、

家でパンを焼いていました。

Early bread was good, but the shapes were bad.
作り始めたころは味は良かったのですが、形が良くありませんでした。

I am a BIG fan of hard, tough bread. The kind of bread that you can find easily in European countries. The kind of bread that feels like you have to fight it in order to eat it.

私は固くて丈夫なパンが大好きです。そういったパンはヨーロッパの国で簡単に見つけられます。
皆さんはそれを食べるのに一苦労するでしょうね。

This bread good, but the color was too light.
こちらのパンは、色が薄すぎます。

This kind of bread is very difficult to find in Japan, so I decided I would teach myself how to make it at home. I started using whole wheat flour, and then mixed in wheat bran, wheat germ and graham flour. This gave the bread a lot of flavor and toughness.

これらのパンは日本で見つけるのがとても難しいので、自分で作り方を研究しようと決めました。

小麦粉をいっぱい使い、麦のぬか、麦の芽、グラハム粉といっしょに混ぜました。こうすることでパンの風味がよくなり、

より丈夫になります。

Later, I started to add sesame seeds, mixed nuts (almonds, cashews and walnuts), and raisins. This made the flavor much better and made the texture tougher. I also adjusted the amount of water in the dough to make the bread tougher and drier. 

その後、ゴマやミックスナッツ（アーモンド、カシューナッツ、クルミなど）、レーズンを加えました。
こうすることで味がさらに良くなり、歯ごたえが増します。そしてパンをより硬く、乾燥させるためにパン生地に入れる
水の量を調節しました。

These ones had good color and nice shape.
これらのパンは色も形もバッチリです。

Lastly, I started to ferment the dough for long periods of time in the refrigerator (sometimes five days).  This made the bread taste sour and a little sweeter. 

最後に、冷蔵庫で長時間（時には5日ほど）小麦粉を発酵させました。こうすることでパンに酸味が加わり、

少し甘くなります。

Now, I can make bread that is just as delicious in my home than a bakery.

今や私は、パン屋よりも美味しいパンを家で作ることができます。

My life in Vietnam

Hello everyone. I’m a new teacher here. 
I’ve only been in Japan for 3 weeks so I have not learned enough to say much about it, although I really like it so far. 

皆さん、こんにちは。講師として新しくSESに入りました、リラです。日本に来てまだ2週間ほどなので、たくさん話せるほどではありませんが、

本当に日本が大好きです。

Before moving to Japan, I lived in Vietnam for 5 months, 
specifically in Saigon (Ho Chi Minh City). 
Life there was interesting. 

日本に来る前は、5ヶ月程ベトナムのホーチミン（旧サイゴン）に住んでいました。そこでの生活は面白かったです。

Everybody drives motorcycles instead of cars so traffic is very chaotic there. 

Just being in traffic is a terrifying experience. 

ベトナムの人たちは車の代わりにバイクを使うので、交通量がとてもひどいです。

Once I took a road trip to Vung Tau. Vung Tau is a beach resort town near Saigon. 

昔、ブンタウというところに旅行をしました。ブンタウはサイゴンの近くにあるビーチリゾートの町です。

There is a giant statue of Jesus as well that can be seen throughout the whole area. 

そこには巨大なキリスト像もあり、町の至る所から見ることができます。

So that was my experience of Vietnam. 

The people there are very nice and they eat good food. 
However, what I liked the most about living in Vietnam was the freedom - there are not many rules that you have to follow 😀

ベトナムの人たちはとても素晴らしく、おいしい食べ物も食べています。
ですが、私がベトナムに住んでいて一番好きだったことは、「自由であること」です。
守るべきルールはそんなに多くありません。

A Little Bit Of Nature

Hey it’s me again! Shelly- Ann. I thought it would be great to show some of the wonderful things that I have seen just moving around the community.

こんにちは、シェリー・アンです。皆さんに私が訪れた場所の素晴らしい写真を見せることができて嬉しいです。

First, this is a fellow whose name I can‘t remember! We shared lunch at the foot of the Buddhist statue in South Korea!  He was a funny guy.

まずは、このワンちゃんです（名前は忘れてしまいましたが・・・）。韓国にある仏像の足元で、いっしょにお昼ご飯を食べました。

かわいい子でした。

So after lunch I was very happy!!

昼食後は、うれしい気持ちになりました！

I was sitting in the car one day and this insect was staring at me through the windscreen.

ある日私が車の中にいると、窓の外からこの虫が私をじーっと見つめていました。

The mushroom was on a path of a hiking trail. I really wish I knew how to harvest them safely 

このキノコはハイキングをしているときに生えていました。私はこういったキノコを安全に収穫する方法を知ってればなあと思いました。

And finally, one of the most beautiful sites

そしてこれが一番きれいな場所の一つです。

 I am enjoying this country and the opportunity to visit other places. 

私は日本という国、そして他の場所に訪れる機会を楽しんでいます。

Hello! My name is Monica, and I started teaching at SES with my boyfriend Jacob in April! I am originally from Massachusetts, however I moved to Pittsburgh six years ago. I met Jacob in 2016, and we decided that we wanted to move to Japan together. Fortunately, there were two positions open at SES, so we began preparing to move in March 2019. We arrived and began teaching at SES in April. We’re so excited to be here!

こんにちは！4月にボーイフレンドのジェイコブとSESの先生になりました、モニカです。アメリカのマサチューセッツ出身ですが、

6年前にピッツバーグに引っ越しました。2016年にジェイコブと出会い、一緒に日本へ移ることに決めました。今年の3月に準備をして、

4月にSESで教え始めました。とてもワクワクしています！

Since coming to Japan, I have enjoyed seeing so much beauty here. I’m looking forward to exploring even more of Yamaguchi Prefecture and the spectacular sights it has to offer!

来日して以来、山口の美しい場所を見て楽しんでいます。山口県にある壮観な場所をもっと探検してみたいです！

Luckily, we arrived in Japan at the beginning of cherry blossom season! It was so wonderful to be welcomed to Japan by these beautiful flowers.

運がいいことに、桜のシーズンが始まったころに来たので、綺麗な花に迎えられての来日はとても素晴らしかったです。

During Golden Week, Jacob and I got a chance to visit Tenmangu Shrine in Hofu. We are lucky enough that it’s only a fifteen minute walk from our apartment!

ゴールデンウィークにジェイコブと私は防府天満宮に行く機会がありました。アパートから歩いて15分の所にあったのでラッキーでした！

In June, we visited Amidaji Temple for a hydrangea festival! Hydrangeas are one of my favorite flowers and we loved seeing the beautiful flowers at this temple.

6月には阿弥陀寺のアジサイ祭りに行ってきました。アジサイは私のお気に入りの花の一つで、お寺でたくさんの綺麗な花を見れました。

I’m looking forward to seeing many more beautiful and exciting places to visit in Japan! I’ll see you next time!

Ghosts in Hagi!

Hello! This is Khaulah again with a ghost story!
こんにちは、カウラです！今日は幽霊のお話をしたいと思います。

In May, I went sightseeing in Hagi with two friends who love Japan's military history. We visited influential figures' residences and old private schools for the samurai/philosophers/military men that contributed to the Meiji restoration.
5月に日本の軍隊の歴史が好きな友達2人と一緒に萩へ観光に行きました。そこで私たちは明治維新に貢献した侍や哲学者、
軍人など影響力のあった人の住居や私塾に訪れました。

In one of the dark, old houses, I swear I saw a figure standing inside before a flapping noren. When I looked again, the figure was gone, but the noren flapped as though someone had just left. I asked my friends if employees walk around in there, but they said they didn't think so and didn't see anybody.

ある古い一軒家の暗闇の中で、私はのれんの前に人影が立っているのを見ました（断言します！）。もう一度見ると人影は消えていましたが、
誰かが立ち去った時のようにのれんがパタパタと揺れていたのです。係の人がこの辺りを歩いていたかどうかを友達に尋ねましたが、
誰も見ていないと言いました。

One of them said it's because I said Takasugi Shinsaku wasn't handsome. So his spirit is mad 😱.

「高杉晋作はカッコよくないとカウラが言ったからじゃない？」と友達の一人が言ってました。高杉晋作の魂が怒ったのでしょうか・・・

Coming to Japan

Hello!　My name is Jacob, and I traveled to Japan for the first time with my girlfriend Monica just this past March.

こんにちは！SESに4月から加わりました、ジェイコブです。
今回は3月にガールフレンドのモニカと行った初めての日本旅行についてお話しします。

Though Monica and I knew that traveling to another country was going to be a daunting task, living out the experience was another matter entirely.  From Pittsburgh, we drove seven hours to get to New York City, beginning early enough in the day that we could arrive in time to receive our visas.  From that point, we stayed overnight in a friend’s apartment, then woke up around 4 am to prepare for our first flight on our trip to Japan.  That eleven-hour flight took us from JFK to Honolulu, where we had all of one night to enjoy the city and the (relatively) mild climate before waking up to catch our following ten-hour flight to Osaka.

他の国に旅行することは難しいことであると分かっていましたが、その国で生活するということは全くの別問題でした。まず、ビザを受け取るのにピッツバーグからニューヨークまで車で7時間運転をしました（早く出発したおかげで、ビザを受け取る時間に間に合いました。）そこから友人の
アパートに泊まり、日本に向かう準備をするため午前4時に起きました。JFK（ジョン・F・ケネディ）空港からホノルルまで
11時間の旅をしました。ホノルルでは都会の町と温暖な気候を一晩楽しんで、その後10時間かけて飛行機で大阪まで向かいました。

            When we finally arrived, we were exhausted – but without working phones, we couldn’t navigate or use our email, and so after a quick lunch, we managed to figure out how to acquire temporary SIM cards, then caught a taxi to our room for the night.

　　　　大阪に到着する頃にはヘトヘトになっていましたが、携帯電話が日本で作動しなかったので、ナビも使えなければメールも
使えませんでした。なので昼食後に携帯を作動させるSIMカードをどうやって手に入れるか調べて、ホテルへ向かうタクシーに乗りました。

           The next day brought with it the challenge of learning to navigate the Shinkansen system while barely being able to speak Japanese.  We arrived at the station several hours early, and found a small traditional Japanese restaurant to eat breakfast at before setting out to explore the area and make sure that we were prepared well ahead of our scheduled train. Eventually satisfied that we would be able to find the train and make it to Shunan in time to meet our appointed point of contact, Monica and I spent the rest of the morning catching up on much-needed rest before our train arrived.  We made it back to the station in time for a quick lunch, and recognizing the waitress who served us that morning, told her in broken Japanese that breakfast was delicious, and then tried to apologize for cluttering up the restaurant with our luggage.

　　　　翌日は日本語をほとんど話せない中で新幹線にどうやって乗るかということに挑戦しました。数時間前に駅に到着しましたが、
周辺を探検したり、乗る電車の確認をする前に日本料理屋で朝食をいただきました。結局は目的の電車を見つけて、周南での約束の時間に
間に合いそうだったので、よかったです。電車が到着するまでの朝の時間に、モニカと私は十分に休みました。昼食を食べに駅に戻ったのですが、ウエイトレスさんが私たちに朝食を運んでくれた人でした。なので私たちは彼女にぎこちない日本語で朝食がおいしかったですということと、
レストランを荷物で散らかしてしまったことを謝罪しました。

　　　　One two-hour ride through the Japanese countryside later, we arrived in Shunan, drove to Hofu, and situated ourselves in our designated hotel room where we would spend the next week waiting for our apartment to be cleared out and trying to acquaint ourselves with the area around YouMe town in Hofu.  There’s still so much that we have yet to see and experience here, but now that we’ve had time to relax and really settle in to this quiet little city, I think we’re both extremely grateful for the chance to have this experience.  Even though our Japanese is still very much a work in progress, people have been very patient and understanding with us, even though we can’t always communicate exactly what we want to. Everyone that we’ve met so far has been very helpful, and I’ve very much enjoyed getting to know the city as well as my students during my first two months in Japan.

　　　　1~2時間電車に乗った後、周南に到着して車で防府に行き、決められたホテルへ移動しました。翌週は次に住むアパートが綺麗になるまでそこで過ごし、ゆめタウン防府周辺について知りました。防府には私たちがまだ見たことも経験したこともないものがまだありますが、今ではこの静かな町で落ち着いた時間を過ごしています。日本語はまだまだ勉強中で、人々と自分たちがしたいコミュニケーションをとれないことも
ありますが、皆さん私たちのことを理解しようとしてくれています。私たちが出会った人々は皆、私たちのことを助けてくれます。
日本に来て２ヶ月が経ちますが、生徒の皆さんや防府市のことを知るのをとても楽しんでます。
